Total Time:
Prep: 15 minutes, Bake: 20 minutes
Makes 9 cups

The beauty of making granola at home is you get to pick the ingredients according to taste, budget and nutritional requirements. This easy recipe is a great place to start and features chunky bits of dried fruit – delicious served with yoghurt or grabbed as an on the go pick-me-up.

Although this wholesome recipe packs a nutritional punch, it’s also a calorie bomb and should be consumed in smal portions.

As long as the quantities are kept more or less consistent, you can replace any of the nuts, seeds or dried fruit with your favourites.

5 cups oats
1 cup sliced almonds
½ cup sunflower seeds
½ cup ground linseeds
½ cup dark brown sugar
¼ cup maple syrup
¼ cup honey
2 tablespoons canola oil
½ teaspoon salt
½ teaspoon cinnamon
1 teaspoon vanilla essence
½ cup dried cranberries
½ cup dried banana chips
½ cup dried apricots, cut into bits

Mix the oats, almonds, sunflower seeds and linseeds in a large bowl.
Combine the brown sugar, syrup, honey, oil, salt and cinnamon in a small saucepan and cook over medium heat for 2-3 minutes or until the sugar is dissolved and the mixture is heated through.
Remove from the heat and stir in vanilla. Pour over the oats mixture and fold over with a wooden spoon to coat.
Transfer to a large greaseproofed baking pan and bake at 180° for 20-25 minutes or until golden brown, stirring it a couple of times.
Allow the mixture to cool completely before adding the dried fruit. Store in an airtight container.
